The Dean 806-5518 Cover that fits fryer models with an opening of 15-1/8 inch by 20-5/8 inch fry pot. It is placed directly on the rim of the pot, and it is utilized to cover the oil space when cooking is interrupted or finished. This cover is used together with the fryer body to facilitate regulated shutdown processes and cleaning operations. It is applied in commercial foodservice kitchens where fryers are in use all day long. Its cover is usually changed when it gets deformed or does not seat properly as a result of repeated handling, heat exposure or impact.
