The Frymaster FM2507 Auto Reset Hi-Limit Thermostat is a safety control designed to monitor fryer temperature and interrupt heating when the 425°F high-limit threshold is reached. Installed within the fryer temperature control circuit, it responds to excessive oil temperature by opening the electrical circuit connected to the heating system. This stops further heat production until the temperature decreases to the thermostat's reset level. Its automatic reset operation then closes the circuit and allows normal heating control to resume. The thermostat works with the fryer’s primary temperature control and heating components as a secondary temperature protection component.
