The Hobart 346357-00001 Convection Oven High Limit Thermostat Disc Type is designed to provide thermal protection in compatible commercial kitchen equipment. Installed within the ovens heating compartment it monitors temperature conditions independently of the primary thermostat. If the sensed temperature rises above its calibrated limit the thermostat interrupt electrical power to the heating circuit to prevent continued heat generation. It works with the ovens control wiring heating elements and security systems to manage over-temperature conditions, allowing the appliance protection system to respond properly during abnormal operating situations.
