The Dean 806-0813 Temperature Fenwal Thermostat W/Wire Leads 75-550F 1/4" Push-ON 1/2" NPT Mount 4-3/4" Probe is acomponent that maintains cooking temperatures in commercial systems. This is placed in the control unit, where it detects changes in temperature and transmits this information to the heating unit. This thermostat is compatible with MJ35/J1C models and works with the fryer wiring and control components. It is in use throughout operation to regulate temperatures. It is usually replaced during maintenance when it fails to react and allows the fryer to remain in operation during normal cooking periods.
